About this course
The Basics of Spice Milling programme is a practical, industry-oriented curriculum designed to develop professionals with technical and entrepreneurial skills in the spice-processing sector. The programme covers the complete spice-processing cycle, including procurement, cleaning, grading, storage, milling, grinding, blending, packaging, quality control and food safety. It also integrates modern grinding technologies, digital business tools and entrepreneurship development. Students receive a combination of classroom theory, laboratory and workshop practice, industrial visits and project-based learning. The curriculum includes 10 compulsory modules covering spice processing, production planning, raw-material management, cleaning and grading, milling operations, quality control, packaging and logistics, entrepreneurship/MSME development, AI and digital marketing, and industrial exposure. The course also provides elective specialisations in chilli and turmeric powder production, whole-spice grading and export preparation, masala/blended-spice development, and spice oil and oleoresin extraction. Students also learn how to establish spice-processing businesses, prepare project reports, understand MSME schemes, use AI and digital marketing tools, sell through e-commerce platforms, and develop their own spice-based enterprise.
